Hello All!
Finding recipes that are both GF and CF can be difficult. But there are some super ones out there. Maybe you know of one or two.
Here is my favourite recipe I found for Scalloped Potatoes. If anyone else has favourite tried and true recipes that would be great! Looking forward to seeing all your recipe ideas!
Scalloped Potatoes
4 medium russet potatoes, peeled and sliced
3/4 tsp onion salt
1/4 tsp ground white pepper
1 tbsp chopped onion
1/8 tsp ground nutmeg
1 tbsp canola oil
2 tbsp potato starch OR Sweet rice flour
2 cups soy or rice milk
1 tbsp soy Parmesan cheese (Optional)
1 tbsp non dairy margarine
Paprika for garnish if desired
Preheat oven to 350 deg C. Grease a 1 1/2 Quart baking dish. Toss potatoes with onion salt, pepper and onion in the baking dish.
Combine remaining ingredients except the margarine and paprika in a screw top jar. Shake vigorously until combined. You can also blend in a blender until smooth. Pour milk mixture over potatoes. Dot with margarine. Sprinkle with paprika if desired.
Bake, uncovered for 1 hour or until sauce is bubbly and potatoes are lightly browned.
Makes 4 servings
